Chipotle’s Chicken Marinade Copycat Recipe

Chipotle is one of the most popular Mexican restaurant chains in America. We hope you enjoy this Chipotle copy cat recipe as much as we do.

1 (2 ounce) package of dried Ancho chilies
1 tsp black pepper
2 tsp cumin powder
2 ½ tbsp fresh oregano (chopped)
6 cloves garlic
1/2 red onion (quartered)
1/4 cup vegetable oil
4 chicken breasts (6 ounces each)
salt

Soak the chilies overnight in water until they become soft, and then remove the seeds.
Add all the remaining ingredients except for the chicken in a food processor. Puree until smooth.
Spread the mixture over the chicken and refrigerate for a minimum of one hour and as long as 24 hours.
After marinating, heat the grill to about 400 degrees F, or if cooking on the stove top, heat a small amount of oil in skillet or grill pan over high a heat.
Salt the meat to taste (optional), and grill lightly, turning only
once, until done. About 4 minutes per side of chicken.
